Anime title logos are drawn, not set, and they have a constraint Latin logos do not: they must sit beside Japanese characters and hold equal weight. That pushes them toward heavy, simple shapes with strong silhouettes, because anything delicate loses the balance.
The hard diagonal cuts are the shorthand for the genre. They suggest something struck or severed, which is why the same device turns up across shonen titles that otherwise look nothing alike.
